Adler Spa Resort, Siculiana, Sicily
Surrounded by vineyards, olive trees and the Torre Salsa Nature Reserve, this luxurious hotel resort focuses on wellness and fitness and boasts a host of top-quality facilities. It took years to find the special location, which includes a large beach that is usually very quiet. The swish spa and wellness facilities include a choice of saunas and pools, a large gym and free yoga, Pilates and other sessions, plus free bicycle and eBike use. There's an excellent restaurant and an osteria serving both Mediterranean and Sicilian cuisine, and comfortable, spacious guest rooms.

THE DETAILS
Location
The resort is surrounded by unspoiled countryside, vineyards and olive tree orchards. The Torre Salsa Nature Reserve, a haven of biodiversity that opened in 1976, is nearby. Beyond it is a large stretch of white beach that's usually very quiet.
Visit the Valley of the Temples complex at Agrigento; or walk 1o minutes to the beach at Torre Salsa.
By plane: flights to Palermo take 3 hours from London and 3 hours 30 minutes from Edinburgh. The hotel is a 1 hour and 45 minute drive. Free on-site parking. skyscanner.net

With its strong wellness focus and exceptional spa facilities, it is very much geared to couples. We loved the attractive earthy colours used throughout.

There's a variety of fitness and wellness facilities, which are all of a very high quality. Guests have easy access to a lovely beach, that is often all but deserted.

Rooms
Suites are spacious, minimalist and decorated in earthy tones - although orange chaise longues inject some colour. Floor-to-ceiling sliding doors open to a wooden decked terrace looking out to a shared lawn. The tiled bathrooms are swish, with rainfall showers. The lighting is dim, obviously to promote a relaxing feel.

Food & Drink
The light and airy restaurant has minimalist décor in earthy tones, with floor-to-ceiling window offering views out to the sea. The breakfast buffet is impressive, with a large selection of high-quality items including pastries, cheeses, meats, smoked fish, yoghurts, fresh juices and eggs cooked various ways.
Seaview Restaurant: Sicilian cuisine and fine wines. Open for buffet breakfast and dinner.
Osteria: Mediterranean cuisine, dishes include salads, pizza and pasta. Open for lunch.
