WHAT WE LOVE...

This French-owned five-star hotel in the south of the medina exemplifies the idea of 'living architectural heritage'. An impressive fusion of five historic riads, it opened in 2004 and has been assiduously decorated in a traditional Moroccan style using generations-old crafts and techniques that were supervised by conservation experts. The result is an engaging and comfortable sanctuary that has only 28 rooms and suites but nevertheless boasts two restaurants, a high class spa and a 34ft pool. Binding all this together is a large, flower-filled roof terrace that includes a bar, yoga studio and cooking class workshop. Most guests stay two to five nights, using it as base for exploring the city, with some also visiting a sister property on the Atlantic coast at Oualidia.
