Montesol Experimental, Ibiza Town, Ibiza
The Montesol Experimental, in the heart of Ibiza Town, dates back to 1933 and claims to be the oldest hotel on the island. Now in the hands of uber-cool cocktail connoisseurs turned hotel and restaurant outfit, The Experimental Group, the hotel's eye-catching exterior makes something of a statement on the main square of Vara de Rey. Still a place to be seen - Orson Welles once stayed here - the hotel manages to retain its nods to the past, while being hip and on-trend - hence the Sabbaba Montesol restaurant, which blends cuisine from Jerusalem and Spain. There's also a terrific rooftop cocktail bar, with views of the citadel.

The hotel is in the centre of Ibiza Town, a short drive from the airport and with plenty of shops, bars and restaurants nearby.
