Opened in October 2021 after nine years in the making, Hôtel Madame Rêve is set inside a monumental 1st arrondissement post office built on rue du Louvre in 1888. At night, La Plume has a lovely view of the lit-up Sainte-Eustache church, then at breakfast you get a wider panorama across the rooftops of central Paris. We recommend the sea bream sashimi and wagyu beef tataki at La Plume, capped off by a 2000 Feuilles pastry by star chef Pierre Hermé.
